- One kilogram of a white pumpkin (safed kaddu). Make sure it is hard.
- Two teaspoons of chemical lime (chemical lime in the form of calcium hydroxide is used in food processing), chemical lime is edible.
- Three cups of sugar, the amount of sugar can vary depending on your preference for sweetness.
- Three standard cups of water
- Two tablespoons of milk mixed with two tablespoons of water
- One tablespoon of lemon juice
- Three to four green cardamoms (elaichi crushed, remove its covering) for flavor
- One teaspoon of rose water (Gulab Jal)

The Petha Recipe
The following petha recipe is easy to follow. You will be easily able to make petha at home by following this recipe.
- To start with, scrape or peel the white pumpkin and remove the seeds from within the pumpkin. Also, remove the thread-like fibers from the pumpkin.
- Cut the pumpkin into thick slices, and make pores in these pumpkin slices using a toothpick or a fork. Using a fork will make your work easier.
- In a wide bowl or container, fill with water and add only one teaspoon of chemical lime. Add enough water to immerse the pumpkin slices completely.
- Please take out the immersed pumpkin slice after a few minutes and wash it well.
- Again make a chemical lime and water solution using the remaining one teaspoon of chemical lime. To this solution, add the pumpkin slices again and leave them for about two hours.
- After two hours, take the slices of white pumpkin and wash them thoroughly so that traces of chemical solution is not left in them. Wash it two to three times if needed.
- Put the pumpkin pieces into a deep boiling container, fill it with water to cover the pumpkins, and bring this to a boil. Boil the pumpkins till they turn transparent.
- Separately prepare the sugar syrup or chaashni in a pan by dissolving three cups of sugar into water over low flame, stirring continuously.
- Once the sugar is completely dissolved and one thread consistency is reached in this sugar and water solution, add lemon juice and crushed cardamoms to it. There are chances that some foam may be created over the syrup. Remove it by skimming it off.
- Transfer the pumpkin slices into this syrup, and let it cook for a few minutes. It will be ready to be removed from the stove. Once the pan has been removed, add rose water and mix well. Let it cool.
