Banana Stem Recipe Ingredients 

  1. One Banana stem, remove the outer layer, and chop it
  2. One bulb of onion finely chopped
  3. One and a half teaspoons of Red Chilli powder
  4. One and a half teaspoons of Curry powder
  5. One-fourth teaspoon of Turmeric powder (Haldi)
  6. One teaspoon of Cumin powder (Jeera)
  7. Two teaspoons of curd or hung curd 
  8. Salt as per preference
  9. Two teaspoons of Gram flour (besan)
  10. One tablespoon of oil
  11. One teaspoon of mustard seeds or rai
  12. One teaspoon of Cumin seeds (Jeera)
  13. Two Curry leaves (meethi neem)

Follow the method below to make Banana Stem Poriyal, but remember that chop the banana stem at the end when all other preparations have been done because the banana stem starts turning brown due to a reaction with oxygen present in the air.

Step 1

The first step in making the Banana Stem curry recipe is to collect all the other ingredients. Then make cuts on the layer of the banana stem and throw away the outer covering or the outer layer.

Step 2

Start slicing the Banana Stem carefully. Keep in mind that when you slice the Banana stem, thread-like fibres will start coming out of it, do not worry. Keep removing them. Once the slices are cut, cut the slices into about one-inch pieces.

Step 3

Starting with the cooking:

  • Take a wok or kadhai, and add one tablespoon of vegetable oil. When the oil becomes hot, add mustard seeds, let them splutter for about ten seconds, and add cumin seeds and let them splutter. Add a few curry leaves (Kari patta or meethi neem) and saute till you feel that the leaves have become crispy.                                                                                                    
  • Add the chopped onions to the wok and continue with the sautéing over medium flame till the onions turn translucent. 
  • Once the onions are done, add in the chopped banana stem pieces and cook with a bit of water. Add water by splashing with your fingers so that extra water is not added. Cover everything and let the banana stem cook till the banana stem becomes soft.
  •  If you want to make this banana stem recipe more crunchy and crisper, then undercook the banana stem. Once the banana stem is cooked according to your preference, add the spices such as cumin powder (jeera), curry powder or sambar powder (it is readily available in the market), red chili powder, gram flour, or besan (adding besan is optional, it is used to soak in the extra water but if you do not have excess water in your dish then you can skip this step). 
  • Finally, add salt as per your taste and saute. Over medium flame, let it simmer for one to two minutes.
