Chicken Ghee Roast Ingredients

  1. One kilogram of boneless chicken – cut them into pieces
  2. Chilies- a special byadgi chili is used in this recipe. It is a particular type of chili grown in the state of Karnataka
  3. Curry leaves
  4. Onions
  5. Two tablespoons of coriander seeds or dhania
  6. Two tablespoons of black pepper kernels or kali mirch
  7. Two tablespoons of cumin seed or jeera
  8. Finely chopped or grated ginger (about two tablespoons)
  9. Two teaspoons of fennel seeds or saunf
  10. Two tablespoons of garlic that is finely chopped
  11. One-third cup curd 
  12. Salt as per your preference 
  13. Lemon juice
  14. Desi Ghee 
  15. Jaggery (Gud) powder

The above-listed ingredients are the ingredients that will be required to make Chicken Ghee Roast.

Recipe to make the Chicken Ghee Roast

Step 1:Preparation of masala

In a skillet, roast the spices, add 3-5 byadgi red chili on medium flame roast it well for 3-5 minutes on medium-low flame till well roasted. Put it aside, then in the same pan, add cumin seeds, coriander seeds, black pepper kernels, and fennel seeds and roast them well.                                                                                                                                

First, crush the roasted chilies in a mixer grinder, then add the roasted spices and ginger and garlic. Also, add little water so that the paste becomes smooth. Keep this paste of spices aside.

Step 2:Marinating the Chicken

Put the boneless chicken pieces in a large mixing bowl, and add the prepared masala that you kept aside. Also, add curd lemon juice, salt, and ghee. Marinate the chicken pieces nicely and keep the marinated chicken in the refrigerator for four to six hours.

Final Step

In a wok, heat one tablespoon of desi ghee. Start by adding the curry leaves (kadhi patta). After the curry leaves are roasted, add chopped onions, stir the onions and let them turn translucent. If you want, you can add a bit of salt to make the onions cook faster.

Once the onions are done, add the marinated chicken but remember to bring out the chicken from the refrigerator at least twenty-five to thirty minutes before adding it to the pan. Mix it well, add salt and let it cook for about thirty minutes. Keep stirring it in between till the chicken is cooked well. Towards the end, add a little bit of jaggery powder and let the chicken cook.

The chicken will be ready when the ghee starts leaving the side.

Your scrumptious dish is ready to be served. It will taste best with steamed rice. This dish is not too spicy as the special byadgi chilies are not that spicy. If you want, you can also use bone-in chicken. It will not bring any difference to the taste of Chicken Ghee Roast. It is a famous Mangalorean dish. 

Pro Tip: Try to make the dish in a vast deep kadhai or pan. The dish is supposed to be of a dry consistency.Since chicken is used as the primary ingredient, this dish becomes nutritious too.

Please leave it in the refrigerator for about half an hour, and take it out when you eat your meal.
