Soan Papdi Recipe

Soan Papdi is an Indian sweet or mithai that everyone loves. It is readily available at confectioneries and is one of the most distributed sweets during Diwali or Deepawali and Holi festivals.Soan Papdi is a delicious, crispy, crumbly, and flaky dessert. It has a very different texture and taste than other Indian desserts.

In most Indian sweet shops, Soan Papdi is found in cubical, round, or square shapes. But different chefs make it differently by adding their personal touch to it. However, in the earlier times, soan papdi was sold in a loose form, but now it is found in compact shapes. Soan Papdi is also known as Sohan Papdi and Sohan halwa in a few parts of India.

A fun fact about this dessert is that soan papdi has a striking resemblance with a Turkish origin sweet and dessert that goes by “Pismaniye.”People living in Rajasthan, Uttar Pradesh, and Gujarat have a particular liking for this sweet dish.

Well, if you have a sweet tooth, you already must have had this sweet dish, and if you have not consumed soan papdi yet, do not delay. You can also make this fantastic soan papdi at your home. Take out time, collect all the ingredients and start with it.

The ingredients used are pretty basic and readily available. A mixture of flours can be sweetened with sugar or milkmaid (or any other sweet flavor agent), then the soan papdi will be decorated with different types of dry fruits.

Making Soan Papdi at home can be time-consuming so do this task on holiday or during vacation.

Soan Papdi Recipe Ingredients

The following Ingredients are required for preparing the soan papdi at home:                        

In the below-stated recipe, two types of flour have been used.

  1. Two and a half cups of gram flour (Besan ka atta)
  2. Two and a half cups of all-purpose plain flour (maida)
  3. Half kilogram desi ghee
  4. Five cups of white sugar
  5. Two and a half cups of water
  6. One-fourth cup of milk
  7. One teaspoon of cardamom or elaichi dana (crushed) 
  8. Dry Fruits of your choice like cashew nuts, almond nuts, pistachios, etc.
  9. Butter Paper or Polythene sheets (optional)

Soan Papdi Recipe

Step 1

Sieve the flours (gram flour or besan and plain flour or maida) together in a mixing bowl and keep them aside.

Step 2

Please take a deep and big pan, and heat desi ghee over medium flame. Once the ghee is prepared, pour the sieved flour you had kept aside into the pan and roast it until it turns golden brown. Once the flour is done, remove the pan and keep it aside.

Step 3

In another pan, add milk and water and put it over low flame. Add sugar to this and keep stirring so that it is well combined. Simmer it till a two-thread consistency is reached. The two-thread consistency is also called a softball consistency. To check this, take a bowl and fill it with cold water. Add the sugar syrup to the cold water, and if it forms a softball, then your syrup is ready. Pour the syrup in the pan into the flour mixture, combine and mix well until the mixture forms threadlike flakes. This method involves mixing and pulling the variety apart alternatively. 

Step 4

Grease a plate using butter or ghee, transfer the mixture prepared in step three to the greased plate, now pat this mixture to flatten it using a wooden or nylon spatula. It will be flattened into a one-inch thickness. Over this mixture, sprinkle the nuts and dry fruits that you want to add as garnishing (use chopped cashew nuts, chopped almond nuts, and you can also put some crushed or powdered cardamom). Press gently so that the garnishing sticks to the dish. 

Let everything cool down.

Once the Soan papdi is cool, cut it into small pieces in any shape you like. Since it is flaky in texture, it is advised to put the pieces of soan papdi into mini polythene packets. Store it in an air-tight container and bring it out when craving sweets.

Your soan papdi is ready. 

Although it is time-consuming, it is easy to prepare soan papdi. It is always better to make sweets and desserts at home because you can never be sure of the purity of ingredients used in the markets. So if you can afford the time to make soan papdi at home, do it.

Soan Papdi is almost everyone’s favorite during festival times. You can also have it on regular days after your meal as a sweet dish.

Soan papdi is tasty, delicious, and has a mild taste. It feels like heaven in the mouth.
