The Patties Recipe

You will need to prepare the potato filling and puffed flour pockets. The given recipe is to prepare rectangular pockets. An oven will also be required.

Ingredients for the flour pocket:

  1. Refined flour ( around two hundred and fifty grams)
  2. Salt ( half a teaspoon)
  3. Oil (four to six tablespoons)
  4. Margarine (substitute of butter that is made of vegetable oils, it is healthier than butter)

Margarine is an essential ingredient in preparing patties as it helps give layers to the flour pockets.

Potato filling ingredients:

  1. Potatoes (boiled)
  2. Ginger (half a teaspoon)
  3. Chilies ( green, optional)
  4. Chili powder (red, optional)
  5. Dried mango powder is also known as amchoor in Hindi (half a teaspoon)
  6. Coriander powder (one teaspoon)
  7. Cumin powder ( half teaspoon)
  8. Fennel seeds ( half teaspoon)
  9. Salt ( as per preference)
  10. Oil (one tablespoon)

Recipe for making the potato filling:

Step 1:

Heat one teaspoon oil in a pan, add fennel seeds, cumin seeds, grated ginger, chilies, and saute well. Add red chili powder, coriander powder, dried mango powder. Once the spices are adequately fried, add boiled potatoes and mix and mash them using a hand masher. Also, add salt according to your taste into the potato mixture, cook it on high flame for about five to seven minutes, you will come to know when it is ready. This is your potato filling that will go into the flour pockets. Please remove it from the stove and let it come to room temperature before using it as the stuffing.

Patties Recipe for Making the Parcels or Pockets:

Step 1: Make the dough using refined flour, salt oil, and water. Keep the dough aside for about twenty minutes. The dough should be medium consistency (neither very stiff nor very soft).

Step 2: Divide the margarine into three portions of approximately forty-one grams. Whisk to soften the margarine; you can also use a fork to ensure no lumps are left.

Step 3: Using a rolling pin, roll the whole dough into a rectangular shape, take one portion of the margarine spreit in on top of the rolled dough equally and then sprinkle dry flour on it, then fold the dough from both sides, but this rectangular portion into a sealed plastic wrapper and refrigerate in for fifteen to twenty minutes. After fifteen to twenty minutes, take out the rolled flour from the refrigerator and repeat the complete process three times (from rolling to refrigerating).

Once this process is complete, please take out the rolled dough the final time and cut the sides of it (this is necessary for layers to be formed), divide the rolled dough into smaller portions of rectangular shapes make a semi fold like a taco, and fill the potato filling inside the hollow space.

Step 4: Apply melted butter on the covering of the patties and spread the patties in a baking dish. Bake it for twenty-five to thirty minutes in an oven at 200 degrees Celsius. Do not forget to preheat the oven at 200 degrees Celsius ( for 15-20 minutes) Your patties are complete and ready to devour by you.

The Pro Tip

If you want to experiment with your patty, you can also make vegetable patties by using several vegetables as filling; you can also grate and put cheese inside the flour pockets. It will taste out of this world if you are a cheese fan.

Cottage cheese stuffing is also easy to prepare to fill the parcels. Skip the chili if you eat non-spicy food. Patties are a great snack.
