- Two to three large aloo (potato), peeled and chopped into squares
- One large tomato or two medium-sized tomatoes
- One finely chopped onion
- Two tablespoons of oil
- One green chili
- One bay leaf
- Red chili powder
- Turmeric powder
- Coriander powder
- Ginger and garlic paste
- Jeera or cumin seeds
- Asafetida
- Garam Masala (powder made from a combination of whole spices)
- Water
The ingredients mentioned above are enough to make basic aloo tamatar gravy, some people also add cardamom and a few more spices, but that is optional.
Aloo Puri recipe Method
The aloo tamatar gravy does not need much preparation. It can be made effortlessly in a pressure cooker.
- Put a pressure cooker on the stove and heat about two tablespoons of oil.
- Once the oil is heated, add one bay leaf (tej patta), a pinch of heeng or asafetida, cumin seeds, and one green chili slit from between. You can also chop the green chili, saute there for a minute, add chopped onions to it, and saute till the onions turn translucent. Add ginger and garlic paste to the onions mix correctly.
- Once the onions turn translucent, add finely chopped tomatoes and saute till the tomatoes turn mushy. Then add one-fourth teaspoon of turmeric powder, half a teaspoon of coriander powder, red chili powder, mix everything well then add chopped potatoes that is also to the cooker and mix everything, so that the aloo absorbs the spices then add half a teaspoon of garam masala mix it in the mixture, add about two cups of water and cover the cooker, pressure cook till two whistles over medium flame.
- After this, take off the cooker from the stove and check if the gravy has reached your desired consistency. If not, add more water. If you think that the water is extra, then let it cook further till the water is evaporated.
- Your aloo is ready to be consumed. You can garnish it with chopped coriander leaves.
